Whole bunch fermentation, light filtration, and minimal sulphur give it a wild edge, while its brightness and juicy texture make it irresistibly drinkable. Gran Cerdo Rosado comes from the same biodynamically farmed vineyards as the Gran Cerdo Blanco, and reflects the same philosophy: minimal intervention, maximum vibrancy. Gonzalo’s hands-off approach allows the fruit to shine, creating a wine that’s playful yet principled.
Winemaker Gonzalo Grijalba has developed a passionate following for his rejection of chemical farming in favour of biodynamic and sustainable methods. He farms without pesticides or herbicides, relying instead on natural treatments that support the health of the soil and vines. Though not certified organic, his commitment to biodiversity and low-intervention winemaking is unwavering.

The ‘Gran Cerdo’ label—Spanish for ‘Big Pig’—is Gonzalo’s tongue-in-cheek tribute to the bank executives who refused to fund his early winemaking ventures. His wines are deeply personal and honest, shaped by his family’s experience with conventional agriculture. Today, they are a testament to resilience, friendship, and the healing power of nature when left to do its work.
